Green Eggs & Ham . . .
Those Americauna hens lay beautiful shades of green eggs. People are often astounded to see a green egg and inevitably ask, "does it taste different?" The answer I sometimes give is, "just wait a bit for it to ripen some more, it's still a bit green." Actually, they taste the same. When we have enough, we try to always add a green egg to every dozen we sell - it has a visually pleasing effect on the customer.
